Description

It’s so simple, but decadent.  And it goes perfectly with everything–under fish, seared chicken breasts, even sliced steak.  Why gild the lily?

Ingredients

1 T
butter
1 T
olive oil
500 g
pea pods (empty, washed and drained)
100 g
peas (fresh)
250 g
spinach (fresh, washed and drained)
1  
onion (medium, roughly chopped)

Instructions

Melt the butter over medium heat. in a nonstick sauté pan.

Add the leeks and water, season with salt and pepper, cover, and reduce heat to low, cooking until the leeks are soft—10 minutes.

Stir in the cream and Parmesan (optional), and serve.
